Zucchini Cobbler – Reciper made with slow cooker

Ingredients

  • 8 Cups Zuchinni, peeled and cut
  • 1 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 3 Tablespoons Flour
  • 1 Teaspoon Cinnamon
  • 1 Can Pineapple
  • 1 Package Yellow Cake Mix
  • 1/2 Cup Butter, melted

Directions

  1. Step One

    Mix the zucchini, pineapple with 1/2 the juice from the can (I use all when baking in the oven), 1/2 the brown sugar, cinnamon. Just toss to get the mixture spread over the zucchini evenly.

  2. Step Two

    Pour into the slow cooker (sprayed mine w/Pam 1st), then sprinkle the top with the dry cake mix, the melted butter and the rest of the brown sugar.

  3. Step Three

    Cook on low 4 hours or high for 2 hours.

    Yummy!! My whole family loved this. My 3 year old hates zucchini and could not get enough of it. All our friends loved it and could not believe it did not have apples in it. The only notes I have to share is that you add the sugar to the zucchini pineapple mixture. It does not say when to add it in the recipe. Also, it did not specify what type or size of pineapple so I used a 20 oz can of crushed pineapple. The results are AWESOME!! We cook a lot of zucchini in the summer and this is now at the top of our list of favorites. Thanks for sharing it!!

    Oh My Gosh…………… this was amazing! I am vegan, so I used the vegan soy butterly spread instead of butter, and searched for a cake mix that contained no eggs or milk (Kroger Value brand) and made this last night! Even my 15 year old son liked it and he knew it had zucchini in it! I would make this again and take it to any potluck!
