White Chicken Chili

Ingredients

  • 3 Tablespoons Olive oil
  • 1 Medium onion, finely chopped
  • 1 Can (4 ozs.) chopped green chilies, drained
  • 3 Tablespoons All-purpose flour
  • 2 Teaspoons Ground cumin
  • 2 (16 oz.) Cans Bush's Best Great Northern Beans
  • 1 (14.5 oz.) Can Chicken broth
  • 1.5 Cups Finely chopped cooked chicken breast
  • Shredded Monterey Jack cheese (optional)
  • Sour Cream (optional)
  • Salsa (optional)

Directions

  1. Step One

    In large skillet, cook onion in oil for 4 minutes or until transparent.

  2. Step Two

    Add chiles, flour and cumin; cook and stir for 2 minutes.

  3. Step Three

    Spray crock pot with cooking spray and put mixture into crock pot.

  4. Step Four

    Add beans, chicken broth and chicken.

  5. Step Five

    Cook on low for 3 - 4 hours.

  6. Step Six

    Garnish with cheese, sour cream and salsa, if desired. Serve with tortilla chips or warm corn tortillas.

    Ok I make this now about every other week! Over the holiday I used my left overs and made chili cheese dip…..I used white ques o cheese and OHHHH sooooooo yummy!!!! Love being able to create things with leftovers!!! Did I mention WE LOVE THIS RECIPE!!!!!!

    I don’t see why not, Alexandra. Let it cool and put it in a freezer bag. The night before you want to make the leftovers, take it out and put it in the fridge. Crock it on LOW for 3-4 hours, maybe more depending on how your crock cooks. We love freezing crockin meals!!!
