Weight Watcher Friendly Taco Soup

A creamy beef and mushroom dish that is only 6 WW pts per serving. Can be served over rice or vegetables of your choice

Ingredients

  • 2 Pounds Lean beef chuck roast, 1" pieces
  • 1 Can 98% fat free cream of mushroom soup
  • 1 Package Lipton onion soup mix
  • 1 Can Diet Sprite or 7-up

Directions

  1. Step One

    Put meat in slow cooker

  2. Step Two

    Mix soup and onion mix together and pour over beef chunks.

  3. Step Three

    Add your diet pop (can be any flavor you chose, but must be diet).

  4. Step Four

    Cook all day and let set 30 min.

  5. Step Five

    You can add any vegetables (0 pts) of your choosing.

    what is cook all day?? can I do 3-4 hours on high??

    Absolutely yummy! I agree it was too runny using a 12 ounce can of Sprite. And I loved the idea of serving it over potatoes. We made it today and served it with Spaetzle (German egg noodles), and my 16 month old daughter tore into it!!! It was a simple recipe, which I really appreciate!

    I made this yesterday (9/12/12). I did add a bit too much soda. I bought a bottle of diet Squirt but poured too much in. It came out very tasty though and great over rice. I added sauteed mushrooms for last night’s dinner and will be adding some steamed broccoli for tonight’s dinner. It just has a good flavor and is not overpowering. I will be saving some of the broth to put over some baked potatoes this weekend, rather than butter or sour cream.
    Very quick, easy and can easily be spiced up.
