Chili Cheese Dogs – A delicous spin on the American classic

Ingredients

  • 1 Can Diced tomatoes (28 oz)
  • 4 Cups Vegetable stock
  • 1 Can Black beans
  • 1 Can Pinto beans
  • 1 Can Kidney beans (drained, rinsed)
  • 1 Cup Corn (I use frozen)
  • 1 Yellow onion, chopped
  • 2 Garlic cloves, minced
  • 1 Red bell pepper, chopped
  • 2 Tablespoons Chili powder
  • 1 Teaspoon Coriander
  • 1 Teaspoon Cumin
  • 1/4 Teaspoon Cayenne pepper
  • Salt and pepper, to taste

Directions

  1. Step One

    Combine ingredients in slow cooker.

  2. Step Two

    Cook on low for 6 hours.

  3. Step Three

    Top with your favorite toppings and eat!
