Chicken, Cranberries, and Celery all played starring roles in this healthy dish that is not lacking in the flavor department! Simple, healthy, and tasty too, this dish is definitely going to be on repeat for us!

Used 6-quart slow cooker

Ingredients

  • 8-10 Chicken Breast tenderloins (boneless, skinless)
  • 3 Stalks of Celery, chopped
  • 1 Cup Dried Cranberries
  • 2 Tablespoons Olive Oil

Directions

  1. Step One

    Combine chicken, celery, and cranberries in the slow cooker and coat with olive oil.

  2. Step Two

    Next add seasonings to your likings (rosemary, thyme, pepper) and mix well.

  3. Step Three

    Cook on LOW for 6 hours, or HIGH for 4.
    Serve with rice and side salad.

    This meal is amazing! So healthy and full of flavor. I am so amazed that you don’t add any liquid to it while it is cooking. Definitely try this one. My family (husband and 2 boys ages 4 & 6) loved it!! Delicious.

    Absolutely delicious!!! It got TOP ratings and praise from my husband. I used boneless chicken breasts, pounded them to an even thickness, and cut each in half to approximate the breast tenderloins that were called for. Thanks for sharing tis fantastic recipe!

    My family and I had this for dinner tonight and loved it! The cranberries added such an amazing flavor. It tasted so much like Thanksgiving to me that I might try it again with turkey cutlets and add all our favorite sides whenever we’re in the mood for a mini holiday dinner;)
