Taco Stew

This is different from your typical soup because it has a hearty thickness to it that won’t leave you hungry. Served with crunchy corn chips and some of your favorite toppings it is a meal the whole family will enjoy. We love meals like this because they are easily doubled to feed a crowd, and that is what it is all about- spending time with the ones you love!

Ingredients

  • 1 Pound of Ground Beef
  • 15 Ounces of Pinto Beans, drained
  • 15 Ounces of Ranch Style Beans, drained
  • 10 Ounces of Rotel
  • 14.5 Ounces of Diced Tomatoes
  • 1 1/2 Cups of Corn
  • 1 Package of Taco Seasoning
  • 1 Package of Ranch Dressing Seasoning Mix

Directions

  1. Step One

    Brown and drain meat.

  2. Step Two

    Combine all ingredients.

  3. Step Three

    Cook on High for 4 hours or on Low for 6+ Hours.

    I made this for supper tonight. It was delicious!!! Definitely a recipe that I will make again. I was looking at the cookbook and it didn’t say to brown the ground beef, so I just threw it in. It cooked perfectly and browned just fine. I used 93% lean so there wasn’t really any fat. It just saved me a step. I don’t think I would try it with regular ground beef though. It might be too greasy.

    we love this soup, i use black beans instead of the ranch never thought of adding them but i do like to add hominey to mine as well.

    Made this last night and it was a big hit! I used ground turkey instead of beef. I served it over fritos and topped it with shredded cheese and sour cream! Soooooo good! I must say, just had it for lunch today and the leftovers are almost better than the day before! =)

    It’s really hard to mess this one up. It is so yummy! There’s been some really good suggestions. I think toppings are a really good idea. Something like: Cheese, Sour Cream, Chips, Avocado, Cilantro. This is one of our favorites.

    Has anyone made this w/o the taco seasoning or have any suggestions of what I could substitute in place of it? My husband does not like taco seasoning. I have even tried using the mild version of it. I love this recipe and I am trying to come up with a way to modify it w/o losing all the flavor!

    Made this last night and my husband said it was one of the best things I’ve ever made! Used turkey instead of beef since that’s what I had on hand. Also used pintos and black beans (no ranch style beans for this Texas girl here in VA), a can of fiesta corn instead of plain, and threw in some chili powder, cumin and red pepper flakes. Topped with shredded cheese, corn chips and avocado … Yum! Like a bowl of taco chili!

  16. Great advise! THANKS so much and so glad it’s a hit with your families, too!! Yes…we brown the meat first, so we can drain off the grease/fat. Jennifer ~ how many servings? I’d say about 8. But it really just depends on how hungry your crew is :) I can’t just eat 1 bowl!! And like Janice said, this one is a great one to freeze and warm up later for a hearty meal if you have leftovers :) cRockin’ Roll!

    I made this twice over this three day weekend. It is delicious. I put the seond batch in freezer containers for quick grabe to take to work for lunch and for quick dinners. The ingredients for this recipe are items that I always have in my pantry. It would make a great potluck dish to take to an event! I am so glad I found yall!     I’ve made this before but I can’t remember how much it made? Can anyone tell me how many servings this makes? I want to make it tonight but don’t want there to be a lot of leftovers! BTW this recipe is yummy and perfect for a chilly/rainy night!! Paired it with corn bread,shredded cheese,avocado,corn chips and it was a HIT in my house!!

    a quick lunch when I come home from work.
    Freezes well but I never have enough
    left to freeze! I do add a can of
    black beans drained and it stretches
    it a little further.
