This recipe is quick and easy and very low in fat as well as calories. You can change up the ingredients to fit what your family likes.

Ingredients

  • 3 Cups grilled chicken breasts
  • 1/4 sweet onion chopped
  • 1 Can Chili beans
  • 1 Can pinto beans or black beans
  • 1 Can corn
  • 1 Package mild taco seasoning
  • 1 Package ranch seasoning
  • 1 Can green chilies
  • 1 Can tomato paste

Directions

  1. Step One

    Cube the chicken breast and cook them until they are no longer pink. Place in the slow cooker. Open all of your cans and keep the juices. Don't drain anything.

  2. Step Two

    Chop up the onion and place in the crock along with your can of chili beans, pinto beans, corn, small can of green chilies, your tomato paste, taco seasoning and you Ranch seasoning

  3. Step Three

    Stir all of the ingredients together and cover. Cook on LOW for 3 to 3 1/2 hours. Serve with olives and fat free sour cream.

    Serving is a cup and a half. It has 289 calories, 5 g. of fat, 29 grams of protein.

    Question – can I leave the chicken raw and just extend the crockpot time or is it required that you cook the chicken first?
