St. Patty’s Day Special – Stuffed Green Bell Peppers
In our homes, things get busy fast. So waking up to this nourishing meal is super
convenient—we just dish it out and then go on our merry way!
This taste just like a stuffed green pepper. Wonderful for cold winter nights. A comfort food for our family. We serve it with Corn Bread.
Another one of my (Nicole) family favorites that I couldn’t resist the urge to crock! A lighter pasta dish when you are tired of cooking the same old thing....
Don’t get pinched! Not only are we wearing green, we are eating it too! These are a favorite around our house, and we thought they would be a great way to get your crock on this St. Patty’s Day!
Used 6-quart slow cooker
- 6-8 Green Bell Peppers
- 1 Pound Ground Turkey
- 1 Onion, diced
- 1 Potato, diced
- 1 Can Whole Kernel Corn, drained
- 1 large Jar Marinara Sauce
- Garlic Powder to taste
- Salt and Pepper to taste
Stuffing: In a large bowl, combine the turkey, onion, potato, corn, 1/2 of marinara sauce, garlic powder, and salt and pepper. Mix all ingredients together, until combined well.
Cut off the tops of the bell peppers, core, and remove seeds.
Place mixture into cored bell peppers until full. Put peppers in the slow-cooker and place tops over the stuffing.
Pour the remaining marinara sauce over the peppers in the slow-cooker.
Cover and cook on LOW for 6-8 hours, or HIGH for 4 hours.
