We love it when our men get in the kitchen and get to crockin'. Jenna's husband Stanton took a family favorite recipe and converted it to the slow cooker. Add some meat for a hearty dish, but this stands alone as a healthy and delicious vegetarian meal. Don't forget the cornbread (And yes you can crock corn bread too!).
- 1 Whole Bell Pepper
- 2 Whole White Onion
- 2 Whole Celery
- 3 Garlic Cloves
- (To Taste) Salt
- (To Taste) Pepper
- 6 to 8 Whole Roma Tomatoes
- 6 Whole Potatoes
- 3 Whole chicken bouillon cubes
- (To Taste) Onion Powder
- (To Taste) Garlic Salt
- 3 bay leaves
- 1 Pound Okra
- 15 Ounces Tomato Sauce
- 4 Cups Water
In a medium skillet, combine the first 5 ingredients. Cook until tender. Place in the slow cooker.
Add the chunked onion, tomatoes, potatoes, water, and the seasonings. Cook on LOW for 6-8 hours, or until your potatoes are tender.
Remove 1 cup of water and bay leaves. Add okra and tomato sauce. Cook for an additional 2 hours or until okra is cooked.
