Sooo easy and fast. I cook this in a smaller round Crock-Pot® so recipe may need to be doubled for a bigger one.
Ingredients
- 1 Pound Ground Meat
- 1 Can Cream of Chicken soup
- 1 Can Rotel Tomatoes
- 1 Package Taco Seasoning
- 1 Can Ranch Style Beans
- 2-3 Cups Grated cheese (cheddar or mixed)
- 1 Package Corn or flour tortillas
Directions

Step One
Brown hamburger meat and drain. Add soup, Rotel, taco seasoning, and beans.

Step Two
Spray Crock-Pot® with Pam

Step Three
Layer tortillas(I prefer corn), meat mixture, and cheese finishing with cheese on top.
When using my smaller crockpot, I will double layers of tortillas to balance out meat mixture.

Step Four
Heat on high or until cheese melts (about an hour)

This is great, and I made a few changes the 2nd time. Instead of pinto beans, I used black beans (slightly drained) and a can of corn (drained) to make it bit more “southwest” tasting. I also added 3/4 cup of chopped onion, a 1/2 teaspoon ground cumin and 1/4 cup chopped, fresh cilantro. The Mexican cheese blend worked great with a bit more flavor, and we love the new “Mission, Artisan corn/whole wheat tortillas”…I used 8 of them. So delicious and it freezes well too!

My family loved this dish…so yummy! It was hit with my 3 & 5 year old little girls, with my hubby too. Instead of using ranch style beans I used black beans. Also, I added enchilada sauce on top…it made so good. Thank you all for these great recipes. :)

Really good flavors and it’s super easy! Added chopped onions and doubled the recipe…. made.a.ton! I will use this recipe again!

Made this last night for dinner… Left out the Rotel as we don’t like Rotel (I know odd unless we have it in cheese) My whole family loved this. My husband that does not like leftovers even packed a lunch today and saved it himself. I was shocked!
