Spinach and Salsa Chicken – nice healthy meal

Ingredients

  • 3-4 Chicken Breasts (boneless, skinless)
  • 2 Cups Salsa
  • 1 Half Bag of Frozen Spinach
  • 1-2 Tablespoons Mrs. Dash Garlic and Herb Seasoning

Directions

  1. Step One

    Place chicken in the slow-cooker, pour salsa and sprinkle seasoning over it, and top with spinach.

  2. Step Two

    Cover and cook on LOW for 6-8 hours or on HIGH for 3-4.

  3. Step Three

    Shred the chicken and mix together with the spinach. Serve on whole-wheat tortillas, over rice, or even over a salad for a healthy meal!

    I made this for dinner tonight over white rice. I didn’t have Mrs Dash so I just raided my spice rack and made my own spice concoction. It came out great! so easy and healthy too!

    Sure thing! You may need to add an hour or two if your chicken is frozen, and don’t be stingy with the spinach…it’ll shrink during the crockin’ process!

    I made this today, it smells great and the taste is the same. I did Change on thing in the recipe I used 1rounded tablespoon of hidden valley dip the Garden green onion . In place of the Mrs. Dash. Hope you all enjoy this as much as I have.

    Cindy, You’ll be fine with the spinach being in this long. This is a yummy dish. It would also be good as an enchilada filler for spinach and chicken enchiladas.

    Isn’t that to long to cook the spinach??
    Shouldn’t you add it towards the end of the cooking time??
