Nothing screams Cinco De Mayo more than fajitas and a good margarita! Let the slow cooker do the cooking while you are relaxing and enjoying the day with...
I serve this with cornbread, so after putting everything in the pot, I make the cornbread and by the time it is done (about 30 minutes), the stew is ready.

- 1 Roast - medium size, any cut
- 1 Jar Pepperoncini peppers
- 1 Can Beef consommé
- Salt and pepper, to taste
Season roast with salt and pepper.
Place in crock pot on low.
Pour in can of beef consommé and half of the juice from the jar of peppers and about half the peppers. (We like it spicy so I just dump in the whole jar of juice and peppers).
Cook on low 8-10 hours.
Serve over sandwich rolls, sourdough tastes best.
