Wake up to the Smells of Breakfast in the slow cooker? Who knew?!?! We loved the idea and just had to try out one of the recipes posted on our Facebook page! We served the recipe with sour cream and salsa, a side of fruit, and some biscuits, and it was very good! This dish would also make a great filling for breakfast burritos, and we think next time we will throw in some hash browns or potatoes to mix it up a bit. There are also options to change up the meat with ham or bacon, and add in other veggies that your crew enjoys. It is so nice to be able to sleep in and still have a hot breakfast ready for the troops in the morning, especially when everyone is trickling out at different times!
Used 6-quart slow cooker
Ingredients
- 1 Pound Cooked Breakfast Sausage
- 1 small Can Green Chiles
- 1 Medium Onion, diced
- 1 Medium Green Pepper, diced
- 2 1/2 Cups Grated Cheese
- 18 Eggs, whisked with salt and pepper (if desired)
Directions

Step One
Layer first 5 ingredients (with cheese being on the top of each layer), and then top the entire breakfast casserole with the 18 eggs.

Step Two
Cook on Low for about 8 hours.

Can you make this ahead of time and have it setting in the frig till time to cook? Say that day and then cook it that night.

I’d suggest using a 6qt crock. You want it 1/2 to 3/4 full. It feeds a lot…maybe 8 large servings or more!

Sorry ladies…hate it when a recipe doesn’t turn out. Dawna, I think you’re right about not letting is crock as long next time. Like men…all crocks are different. You’ve got to get to know ‘em and how they tick..LOL :)
Andra…I’m thinkin’ your crock is too small for all that food. Ideally you want your pot to only be 1/2 to 3/4 full for the best result.

i have tried it twice with the same results, 8 hrs might be too long for our wattage. Gonna try again but maybe for only like 6 hrs?!

Was kind of disappointed with the outcome. Ingredients were tasty and I had used a new 2.5qt crockpot. By morning it was like tofu on the bottom. Very rubbery feel, like the eggs and cheese went to bottom.
