Southern Style Red Beans – A tasty recipe for the slow cooker
- 2 Pounds Pinto beans, washed
- 1 Medium onion, chopped
- 1 Can Diced tomatoes
- 1 Jalapeno pepper, seeded, or 1 small can chopped green chilis
- 2 Slices bacon, or salt pork
- Black pepper to taste, no salt until beans are soft
Use large slow cooker and fill with water up to 2 inches from top.
Turn them on high before going to bed, and then the next morning, turn to low and simmer all day.
