Slow Cooked Peanut Chicken - A tasty recipe for the slow cooker.

Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1/3 Cup Peanut butter
  • 1 Cup Chunky salsa
  • 2 Tablespoons Lemon juice
  • 1 Tablespoon Soy sauce
  • 2 Teaspoons Finely minced ginger root
  • 1/4 Cup Chopped peanuts

Directions

  1. Step One

    In a 3-5 quart slow cooker, mix all ingredients except chicken and chopped peanuts.

  2. Step Two

    Add chicken and stir to coat.

  3. Step Three

    Cover slow cooker and cook on LOW for 8-9 hours or until chicken is no longer pink in the center.

  4. Step Four

    Sprinkle with chopped peanuts as a garnish.

    Made this for dinner tonight. I was looking for something different and easy, this total fit! I cut up my chicken into chunks and also used ground ginger (though I will use fresh next time.) I don’t think it needs so long to cook. Mine was done on low after about 6 hours or less even. Also, add about 1/4 cup water so it doesn’t burn!
