Unwrap the gift of crockin' that let's you relax and enjoy time with your family! This breakfast casserole is sure to be a hit with all of your holiday guests!
- non-stick cooking spray
- 1 Pound breakfast sausage, slightly browned and crumbled
- 12 eggs
- 1 Cup milk
- 1/2 Cup chunky salsa
- 1 Cup chopped mushrooms
- 1 green bell pepper, chopped
- 1 small to medium onion, chopped
- 8 Ounces cubed or diced ham
- 1 Tablespoon prepared mustard
- 1 Cup Mexican blend cheese, shredded (divided)
Spray insert with non-stick cooking spray and add browned sausage to the bottom.
In a large mixing bowl, add eggs and whisk.
Add milk, salsa, bell pepper, onion, mushrooms, mustard, ham, and 1/4 to 1/2 cup shredded cheese. Mix well.
Pour over sausage and top with remaining shredded cheese.
Cover and cook on LOW for 6 to 7 hours or HIGH for 4 to 5. Use a 6 quart or larger slow cooker.
