Merry Christmas from the Crockin' Girls! We gave a gift for you that can't be wrapped up and put under the tree- it's a stress free Christmas Morning! Unwrap the gift of crockin' that let's you relax and enjoy time with your family! This breakfast casserole is sure to be a hit with all of your holiday guests!

Ingredients

  • non-stick cooking spray
  • 1 Pound breakfast sausage, slightly browned and crumbled
  • 12 eggs
  • 1 Cup milk
  • 1/2 Cup chunky salsa
  • 1 Cup chopped mushrooms
  • 1 green bell pepper, chopped
  • 1 small to medium onion, chopped
  • 8 Ounces cubed or diced ham
  • 1 Tablespoon prepared mustard
  • 1 Cup Mexican blend cheese, shredded (divided)

Directions

  1. Step One

    Spray insert with non-stick cooking spray and add browned sausage to the bottom.

  2. Step Two

    In a large mixing bowl, add eggs and whisk.

  3. Step Three

    Add milk, salsa, bell pepper, onion, mushrooms, mustard, ham, and 1/4 to 1/2 cup shredded cheese. Mix well.

  4. Step Four

    Pour over sausage and top with remaining shredded cheese.

  5. Step Five

    Cover and cook on LOW for 6 to 7 hours or HIGH for 4 to 5. Use a 6 quart or larger slow cooker.
