A vegetable casserole with turkey sausage or made without the sausage and can be a vegetarian casserole. This is a one dish meal. Very delicious served with a hot skillet of cornbread.


  • 4 medium potatoes. sliced
  • 4 carrots, sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 Pound turkey smoked sausage
  • 1 Can green beans, drained
  • 1 Whole cabbage, sliced
  • 2 Teaspoons sugar
  • 1 Teaspoon each, salt & pepper
  • 2 Tablespoons olive oil
  • 2 Cups water


  1. Step One

    Slice the vegetables in approximately the same size so they will be done at the same time.

  2. Step Two

    Place ingredients in a slow cooker in the order of the first seven listed above.

  3. Step Three

    Sprinkle the sugar, salt & pepper over the top, drizzle on the oil.

  4. Step Four

    Pour the water over all. Cover and cook for approx. 3 hours or until potatoes & carrots are tender.
