By request, here's my Porcupine Meatballs recipe for the slow cooker. Kids love them, but they also make a great sandwich or appetizer.

Rice Pudding – great recipe for easy homemade rice pudding

Ingredients

  • 1/2 Gallon Milk
  • 1 Cup Long Grain Rice
  • 1 Cup Sugar
  • 4 Tablespoons Butter
  • Pinch Salt
  • 1.5 Cups Golden Raisins
  • Cinnamon to taste

Directions

  1. Step One

    Place milk, rice , sugar, butter, and salt in slow cooker.

  2. Step Two

    Cover and cook on HIGH for 1 hour.

  3. Step Three

    Stir and add raisins and cinnamon.

  4. Step Four

    Cook for another 1 1/2 hours, stirring occasionally.

  5. Step Five

    When pudding begins to thicken, turn off slow cooker.

  6. Step Six

    Pudding will continue to thicken as it cools.

    Well I tried this out except I didn’t add the fruit. Just like mine plain. After a few hours of cooking and stirring it really didn’t thicken up. The rice finally cooked. It tastes very nice and I have it in the fridge in a bowl to cool and see if it thickens. Will let you all know :)

    Made this following the directions in the recipe, except that after the 3 hours cooking, it didn’t seem to thicken up the way I would have expected. Tastes delicious, but was still mostly liquid. Should it thicken to more of a pudding consistency? Growing up, it always did look more like a pudding.
