Ingredients
- 1 Reynolds® Slow Cooker Liner
- 2 Pounds boneless, skinless chicken breast tenders
- 1 medium onion, thinly sliced
- 1 large red bell pepper, cut into thin strips
- 1 large green bell pepper, cut into thin strips
- 3/4 Cup chunky salsa
- 2 Packages (1.4 ounces each) fajita seasoning mix
- 1/4 Teaspoon cayenne pepper
- 16 (10-inch) flour tortillas
- Shredded cheese, chopped tomatoes, guacamole, sour cream (optional)
Directions

Step One
Open slow cooker liner and place it inside a 5- to 6 1/2 quart slow cooker. Fit liner snugly against the bottom and sides of bowl; pull top of liner over rim of bowl.

Step Two
Place chicken in slow cooker liner and add onions and bell peppers on top of chicken.

Step Three
Mix salsa, fajita seasoning mix and cayenne pepper in a medium bowl. Pour over chicken. Place lid on slow cooker.

Step Four
Cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until chicken is done.

Step Five
Carefully remove lid to allow steam to escape. Gently stir chicken and sauce with a plastic or wooden slotted spoon. Spoon 1/2 cup of chicken mixture into center of each tortilla; add desired toppings and fold tortilla over filling. Do not lift or transport liner with food inside. Cool slow cooker completely; remove liner and toss.

Awesome! After the chicken was cooked I took it out to shred it. I added 8oz of cream cheese to the taco sauce in the crock pot. Added the chicken back and mixed. YUM..

So delicious! I made up my own fajita seasoning since I didn’t have any packets. My family (husband and 2 boys ages 4 & 6) loved it. This meal is a keeper in our house!! This would also be a great meal to mix together and freeze. Then dump in the crock the day you want to eat it. Definitely try it!

No Shannon, you don’t need to change your ingredients either if your tenders are frozen.

If I’m using frozen chicken tenders do I need to increase the amount of salsa and fajita seasoning to compensate for the extra liquid that may accumulate? I know my cook time will increase but I didn’t know if I should increase the liquid ingredients.

Not if your crock is 1/2 to 3/4 full. You may need to use a 7qt crock if you double the recipe, but the time shouldn’t change.

If you cut the chicken in half, I would reduce the rest of the ingredients by the same amount too. The cooking time would be the same unless your slow cooker cooks hot. If it boils on low, I would reduce the cook time to 3-4 hours on LOW. Chicken can dry out quickly.

What is the best way to make this recipe for two people? 2lb is a lot of chicken. Would halving it for the same time be ok?

This is exactly like the recipe that I submitted for the healthy crockin’ challenge…mine was minus the cayenne. It’s delicious! We make it once a month at least. Glad to see that others can enjoy the recipe too!
