Ingredients

  • 1 cup quinoa (rinsed)
  • 1 (28 oz) can diced tomatoes
  • 1 (15-ounce) can whole kernel corn
  • 1 (15-ounce) cans black beans, rinsed and drained
  • 1 (10-ounce) diced tomatoes with green chiles, choice of spiciness
  • 1 (15 oz) can black eyed peas
  • 3 cups chicken broth
  • 2 large boneless, skinless chicken breasts
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon crushed red pepper

Directions

  1. Step One

    Toss everything into the slow cooker.

  2. Step Two

    Cover and cook on LOW for 7 to 8 hours.
