A wonderful Mexican dish that I have converted to the crockpot.
- 2 Tablespoons Chili Powder
- 1 Teaspoon Ground Cumin
- 1 Tablespoon Minced Garlic
- 1/2 Teaspoon Oregano Leaves
- 1/2 Teaspoon Crushed Red Pepper
- 1 Pound Ground Beef
- 1 Onion, chopped
- 1 (8 oz) Can Corn, drained
- 1 Can Rotel
- 1 Can Chili Beans
- 1 Cup Picante Sauce
- 6 Flour Tortillas
- 2 Cups Shredded Cheese
Brown ground beef and drain.
Add everything else, except tortillas and cheese. Mix well and heat thoroughly.
Spoon 1/4 of mixture into bottom of slow cooker. Place 2 tortillas on top.
2nd layer....1/4 mixture, large handful of cheese, tortillas. Repeat for 3rd layer. Top with remaining sauce and cheese.
Place lid on slow cooker and heat on low for 3 hrs. I serve with spanish rice.
