A wonderful Mexican dish that I have converted to the crockpot.

Ingredients

  • 2 Tablespoons Chili Powder
  • 1 Teaspoon Ground Cumin
  • 1 Tablespoon Minced Garlic
  • 1/2 Teaspoon Oregano Leaves
  • 1/2 Teaspoon Crushed Red Pepper
  • 1 Pound Ground Beef
  • 1 Onion, chopped
  • 1 (8 oz) Can Corn, drained
  • 1 Can Rotel
  • 1 Can Chili Beans
  • 1 Cup Picante Sauce
  • 6 Flour Tortillas
  • 2 Cups Shredded Cheese

Directions

  1. Step One

    Brown ground beef and drain.

  2. Step Two

    Add everything else, except tortillas and cheese. Mix well and heat thoroughly.

  3. Step Three

    Spoon 1/4 of mixture into bottom of slow cooker. Place 2 tortillas on top.

  4. Step Four

    2nd layer....1/4 mixture, large handful of cheese, tortillas. Repeat for 3rd layer. Top with remaining sauce and cheese.

  5. Step Five

    Place lid on slow cooker and heat on low for 3 hrs. I serve with spanish rice.

    Really delicious overall! But, next time I’m going to back way down on the chili powder (already eliminated the red pepper flakes entirely). It’s still good if you like some kick, but we have a couple family members who don’t handle spicy foods well. So I’ll either go VERY light on the chili powder or replace the seasonings with some mild taco seasoning mix.

    Otherwise, really yummy, easy and very filling!
