Chicken Tortilla Soup – Made easy in the slow cooker

Another one of my (Nicole) family favorites that I couldn’t resist the urge to crock! A lighter pasta dish when you are tired of cooking the same old thing. This makes a TON of food so I like to make up a batch and freeze half, even easier to have a yummy dinner the next time!

Used 6-quart slow cooker

Ingredients

  • 1 Pound Hamburger Meat
  • 1 Cup Onion, chopped
  • 1 Cup Bell Pepper, chopped
  • 2 Cans Diced Tomatoes
  • 1 Can Rotel
  • 1 Can Cream of Mushroom Soup
  • 1 Can Sliced Mushrooms, drained
  • 1 Can Sliced Black Olives, drained
  • Garlic Salt (to taste)
  • 2 Teaspoons Oregano
  • Pepper to taste
  • 1/4 Cup Water
  • 1-2 Cups Shredded Cheese
  • 1 Pound Cooked Spaghetti Noodles

Directions

  1. Step One

    Slightly brown hamburger meat in a skillet until it crumbles then place in slow cooker.

  2. Step Two

    Combine onion, bell pepper, tomatoes, Rotel, cream of mushroom soup, mushrooms, olives, garlic salt, oregano, pepper to taste and water in the slow cooker and mix well.

  3. Step Three

    Cook on LOW for 4-6 hours or HIGH for 2-3 hours.

  4. Step Four

    Add cooked noodles and mix into meat mixture.

  5. Step Five

    Top with cheeses and cook on LOW for another hour.

    GREAT RECIPE!!! I swapped out the meat for lean ground turkey, regular pasta for whole wheat, canned tomatoes for fresh ones, canned mushrooms for fresh ones & I used fat free cream if mushroom & fat free cheddar cheese. One serving averaged out to 300 calories! Even my picky 1st grader asked for seconds!

    I thought it was great and my husband thought it was good. I usually put peppers in my spaghetti and my husband says he prefers the typical spaghetti sauce instead. However, I thought it was delicious and my 2 and 3 year old toddlers even helped me put it together! I don’t like green peppers so I put in a red and yellow one in its place and left out the olives since we don’t prefer them. I did use a little less of the spaghetti noodles because we like more liquid. Everything else I kept the same. Thanks!

    My children absolutely loved this dish! They requested seconds and stated that they could “eat this all the time”! If you want a lighter version, use ground turkey or chicken and whole wheat noodles. Also to cut down on some time, use frozen pre-chopped onion and green pepper. Very yummy dish!

    I tried this recipe and made it exactly as written. Cooked it for about 5-1/2 hours then set on warm. My husband thought it was okay but told me he might like it better if I used some other type of pasta. I used 1/2 tsp. of garlic powder and would probably use more the next time I make it. I would like to try it using penne or ziti pasta. Just realized that I didn’t add the cheese to the crock, but instead I added it after it was plated. That might make a difference. Will definitely try this again.

    We had this for dinner tonight yummy!! I used a 16 oz bag of spaghetti by mistake and it still turned out awesome and we had plenty of leftovers. I gave some to my neighbor and she loved it too. She is really enjoying me cooking all your recipes because I send some to her to have too. Thank you for all these great recipes.

    Christa, I haven’t tried it with chicken but I think it would be really tasty. In fact, to make it even easier, I would use a rotisserie chicken. Let us know how it turns out.

    Okay, Christine…so my friend told me she made this in her 5qt crock and it was COMPLETELY full. Slow cooker recommendations are to fill 1/2 to 3/4 full ~ obviously not what you get with this recipe and a 5qt cooker. With that said, she told me that her spaghetti turned out great! Of course, you don’t want a sloppy mess so this would be the perfect recipe to try out in a brand new 6qt-er!

    I love this recipe! I have three sons and my oldest always complained on spaghetti night. He also hates mushrooms but he did NOT complain at all with this dish…he loved it! Didn’t even pick the mushrooms out :) I added a little tomato paste as i like saucy spaghetti and a bit of fresh garlic but everything else was the same. Awesome recipe, thanks!! We have enough for another whole meal!

    Do you cook the pasta then put it in the crock or do you just put uncooked pasta in the crock. I know some recipes allow you to put uncooked pasta in there.

    Oh my goodness, I have done a ton of crockin in the last year and this is my fav. I made the sauce (eliminated the black olives & mushrooms to tweek it to my husband’s taste). When it was finished I took out half the sauce, cooled it off and froze it. Round one was angel hair pasta with mozzarella on top. Round two I defrosted the sauce in the fridge, put in the crock pot on high to reheat with a small can of tomato sauce, a tomato and part of a bell pepper just to wake it all back up. This time though I put in rigatoni pasta and 6 cheese italian blend on top.

    Tyree, the tomato cans were the 15 oz cans and we did this in our 7 qt slow cooker. You can use a 5-6 qt. Hope this helps.

    I made this for dinner this evening and it was SO GOOD! I used Italian sausage rather than ground beef (that’s all I had). I added a little more garlic salt, too. It made a MASSIVE amount! Tons of leftovers!!!! Yay!
