Mexican Lasagna – A tasty recipe for the slow cooker.
- 2 Pounds Ground meat
- 1 Large onion
- 1 Pound Cheddar cheese grated
- 1 Can Ranch style beans
- 1 Tablespoon Chili powder
- 1 Teaspoon Garlic powder
- Salt and Pepper to taste
- 12 Corn tortillas-cut in strips
- 10 oz Can Cream of chicken soup
- 10 oz Can Diced tomatoes with greenÂ chilies
Saute beef and onions,drain.
Mix beans,chili powder,garlic,salt and pepper and add meat mixture to it.
Line slow cooker with tortilla strips, add meat, sprinkle half cheese, add more tortilla strips, more meat and cheese.
Mix soup and tomatoes together and add to the top,sprinkle rest of cheese on top.
Cover and let "cook" in your slow cooker. I give it a few hours because all you are doing is just letting the cheese melt andÂ softeningÂ the tortilla chips.
Dip out and top withÂ hot-sauce, lettuce tomatoes or whatever you wish.
Its good just like it is with no toppings at all. Enjoy!!!
