Mexican Lasagna - A tasty recipe for the slow cooker.

Ingredients

  • 2 Pounds Ground meat
  • 1 Large onion
  • 1 Pound Cheddar cheese grated
  • 1 Can Ranch style beans
  • 1 Tablespoon Chili powder
  • 1 Teaspoon Garlic powder
  • Salt and Pepper to taste
  • 12 Corn tortillas-cut in strips
  • 10 oz Can Cream of chicken soup
  • 10 oz Can Diced tomatoes with green chilies

Directions

  1. Step One

    Saute beef and onions,drain.

  2. Step Two

    Mix beans,chili powder,garlic,salt and pepper and add meat mixture to it.

  3. Step Three

    Line slow cooker with tortilla strips, add meat, sprinkle half cheese, add more tortilla strips, more meat and cheese.

  4. Step Four

    Mix soup and tomatoes together and add to the top,sprinkle rest of cheese on top.

  5. Step Five

    Cover and let "cook" in your slow cooker. I give it a few hours because all you are doing is just letting the cheese melt and softening the tortilla chips.

  6. Step Six

    Dip out and top with hot-sauce, lettuce tomatoes or whatever you wish.

  7. Step Seven

    Its good just like it is with no toppings at all. Enjoy!!!

    Loved it! Agree with Donna that two pounds of ground beef was a lot, but there wasn’t much left when we were done with dinner! This one made it to the “do again” list!

    This was good but my family thought 2 lbs of hamburger was too much and it didn’t have a mexican taste so next time I will add taco seasoning to the hamburger as was suggested in another review.

    I made this as my first crock pot recipe. It was allright but didnt have much flavor. Next time I am going to make the hamburger meat with taco seasoning! I think that will satisfy my tastebuds a little better! However this was so easy and my husband LOVED it!! I will let you know how it turns out with the taco seasoning!

    This had a great taste. I followed some of the comments and doubled the soup/rotel mixture putting it in the layers, but I am thinking I should have tried it once as is. It turned into more of a dip versus a lasagna consistency. Still very good and I got compliments at the office party I took it too, but think recipe as is would be less like a dip and more like lasagna. Will make again though. :)

    I made this for a church potluck last weekend. Really good. I doubled the chicken soup/ro-tel mixture and spooned it over each layer before sprinkling the cheese. I just thought it would need that sauce throughout instead of just on top. Turned out wonderful.
