Mexican Chicken – Easy mexican chicken recipe made in slow cooker

Ingredients

  • 1 Package Boneless chicken thighs
  • 1 Can Mexican style stewed tomatoes

Directions

  1. Step One

    Place one package of boneless chicken thighs in bottom of slow cooker.

  2. Step Two

    Cover with one can Mexican style stewed tomatoes.

  3. Step Three

    Cook on low for 6 to 8 hours.

  4. Step Four

    When done, take the chicken out of the slow cooker and shred using two forks.

  5. Step Five

    Then put chicken back into the slow cooker and mix well with stewed tomatoes.

    Amanda, putting in frozen thighs would be fine. The cooking time will be more on the 8 hour side.

    I’ve not tried putting the rice in while it is cooking. You would definitely need more liquid. I am sometimes rice challenged so I would rather be safe than sorry.

    I made this today and my husband loved it! I did add a couple of tablespoons of fresh pico de gallo (in your produce dept) and a couple of good shakes of Bolner’s Fiesta Fajita seasioning. I served with the rice and also flour tortillas. Yummy!
