Mexi-Chicken and Beans – A delicious recipe for the whole family to enjoy!


  • 3 large chicken breasts
  • 2 Cans black beans, drained
  • 1 Can Rotel
  • 1 Can sweet corn, drained
  • 1 Package taco seasoning


  1. Step One

    Place chicken on the bottom of the slow cooker and sprinkle with dry taco seasoning.

  2. Step Two

    Pour drained black beans and corn over chicken. Top with can of Rotel.

  3. Step Three

    Cook on low for 4-6 hours or until the chicken is done.

  4. Step Four

    Serve over brown or white rice and top with shredded cheese.

    When I make a mexican style dish and it ends up too watery I like to add rice to it, Kristy. You can throw in a cup of uncooked instant rice about 30 minutes before serving and that should take care of you issue! If you use brown rice or long-grain rice you’ll need to add more time. Probably an hour for long-grain and 1 1/2 hours for brown rice. Just be sure you have plenty of liquid!

    I liked it but it was watery. I’m thinking watery from the corn or rotel any suggestions

    I made this with a little twist, I used chilli beans and kidney beans since this was what I had in the cupboard. Than I used stewed tomatoes and at the end added 1 package of cream cheese. No taco seasoning used. Delish!

    Nope..they sure don’t, Holly! You might have to add a little cooking time depending on how hot your crock cooks. Just make sure when they’re done, they reach an internal temp of 165 degrees :) ENJOY!

    Do the chicken breasts need to be thawed before putting into the crock pot?

    YUMMY! I only had 1 can of black beans, so I added 1 can of pinto and it was still delicious!
