Creamy Chicken Enchiladas – Quick and easy creamy chicken enchiladas
If you like messy or not, you are not going to want to miss out on this mess. Dig into this light and scrumptious meal that you can easily freeze! It may look like a major mess. But the taste and aroma are purely divine!
Used 6-quart slow cooker

- 1 Pound Eckrich smoked sausage, sliced (or your favorite brand)
- 1 bell pepper, chopped
- 1 purple onion, chopped
- 1 Can pineapple chunks, drained
- 1 Jar sweet and sour sauce
- 1 Tablespoon Tabasco sauce (may add more, to taste)
- Fresh jalapeÃ±o
Place all ingredients in the slow cooker.
Cook on HIGH for 1â€“1 1/2 hours or on LOW for 3â€“4 hours, or until bell pepper and onion are tender.
Serve atop a bed of rice or by itself with a salad.
