Simple and Satisfying! Such a simple and tasty soup that really fills you up! We loved the spin on regular potato soup... adding bacon, sour cream, cheese and chives to make it like the oh so yummy loaded baked potato! Served with cornbread, this was SUCH a yummy meal! We hope you guys enjoy this recipe as much as we did, especially with that crisp fall air we seem to be seeing more and more of!

Used 6-quart slow cooker

Ingredients

  • 6 Large Potatoes, peeled and cubed
  • 1 Large Onion, diced
  • 1 Quart Chicken Broth
  • 3 Garlic Cloves, minced
  • 1/4 Cup Butter
  • Salt and Pepper to taste
  • 1 Cup Cream (Half and Half Okay)
  • 1 Cup Shredded Sharp Cheddar Cheese

Directions

  1. Step One

    Combine all ingredients except for cream/ half and half, and cheese.

  2. Step Two

    Cook on high for 4 hours or low for 8 hours (potatoes should be tender).

  3. Step Three

    Then you will need to mash potatoes until coarsely chopped and soup is slightly thickened.

  4. Step Four

    Stir in cream and cheese. Garnish with toppings (bacon, chives, sour cream, cheese).

    Freezing potatoes is pretty iffy. They will tear down and break apart and the soup will be real mushy. It will not change taste. I think it becomes a texture thing.

Super easy and great for these super cold days ( 16 degrees today), I followed the recipe except for the fact that I omitted the butter completely and instead of broth I used one of the new knorr recipe stocks cups. came out fantastic. I topped with a little sliced scallions. definitely give this a try

    Words cant describe how good this was! I Immediately got onto Facebook and instagram to let all my friends know they needed to try this. The only thing different I did was use onion powder instead of chopping an onion and about 1/2-1/34 cup more cheese. Cooked it on low for 8 hours, came out perfect!

    I made this the other day and it was AWESOME!!! My family all loved it and I loved it too! It was super easy to make and tasted awesome. I used more salt and pepper to give it more seasoning. I added extra potatoes and more broth to make it alittle bigger for the family and it was great. I really liked it with the cream added too. It is a really filling soup too.

    This is the first thing I have made from your website and it was a hit :-) I did add some basil, a little more shredded cheese, and shredded carrots to mine but otherwise everything else was the same. I have been trying to find an good (& edible) baked potato soup and everyone I tried just was not good (taste, texture, etc), FINALLY I have one that worked!

    I now have the French Dip Sammie’s cooking, will let you know how they turn out!

    I made this today, a nice snow day.

    I added 1 c of chopped celery and 2 chicken breasts cubbed and added 1/2 way through cooking time. I also substituted Canned Milk for the cream. Great recipe, DH said it was a definite add in to the crock pot routine. Thanks for all you share with us.     After my success with the low for 8 hours I tried the 4 hours on high method. Came out perfectly. Not sure why some other reviewers think this is bland! Maybe they aren’t adding enough salt to it. Adding bacon and chives on the top make a big difference too. Using sharp cheddar is key too. Anyways, this is my go to recipe. Its so darn easy and I usually have everything on hand.

    All I gotta say is wow! Delicious! Turned out perfect! Follow the directions and you can’t go wrong. Make sure to chop the potatoes small enough that way they get done in time. I used the 8 hours on low method. Perfect. It was actually done in 7 hours. The potatoes were nice and tender. I didn’t mash all of them, I left enough for some chunkyness. I read some reviewers thought it was salty so I used a low sodium chicken broth. I did add a little salt at the beginning and a no salt butter. Then after garnishing with bacon it turned out perfect. Some might like it saltier but thats a personal choice. I added more cheese too because we love cheese. Awesome recipe and I will be sharing it! I will try the 4 hours on high method next time. Thanks ladies!

Come together roast is next on my list :) I do have one question… Would it be ok to leave the skins on? When I make mashed potatoes I really like the flavor that is added when I leave skins on.

    OMG!!!! This is the first soup I have ever made.     Very disappointed. I tried this today and for some reason my potatoes did not cook to soft stage. I had to take this out of the crock pot and place in a pot to finish cooking.
    What did I do wrong. These potatoes cooked for 8 hours on low.

    I have made this soup before in my crock. The only difference is that I bake the potatoes ahead of time and when they are cool, I mush up the potato pulp and put that in the crock with the other ingredients. It’s truly “Baked Potato” Soup. Very delicious and you can use fat free half n half to cut down on the fat.

    My husband likes baked potato soup, but I have never found a recipe I have enjoyed. This recipe is delicious! I did substitute the onion with a little (maybe 1 or 2 tsp) onion soup mix because we don’t like the texture of onions, but enjoy the flavor. Otherwise I followed the recipe and it was the perfect.     Kids loved it!!! They enjoyed being able to add their own toppings. I did end up adding a little bit of of cornstarch near the end as it was a little to watered down. A couple Tbsp of the cornstarch did the trick though. Will keep this one in our dinner rotation.

    Flavorful, hearty, easy soup. I did take the advice of some of the others and added more potatoes for a thicker soup – actually used yukon gold. Also added chopped carrots and omitted heavy cream; just added sour cream 1 hour before serving. I am going to try more cheese and green onions next time for a stronger flavor. Thank you!

    This soup was so good! I used 3 pounds russet potatoes (left the skins on) and half-and-half (instead of cream). I also used an immersion blender to break up the potatoes as another user suggested (thanks!); it made the soup nice and creamy. This recipe is so much less labor-intensive than my old over-the-stovetop recipe and much tastier. It’s a keeper!

    Good soup similar to the one I’ve made for years from an old yellowed and torn Rival cookbook that came with our (equally old) slow cooker. Load it up even more by adding a couple peeled/sliced carrots and sliced celery. And yes, if you are using new potatoes or other thin skinned potatoes leave some of the skins on.

    Is it ever wrong to add sour cream…lol It should be fine. I think it would be ok to add the chives and bacon at the beginning as well. I might cut back on the salt a little since the bacon provides so much salt and will be cooking into the soup.

    This is great comfort food for a cold, rainy day. Great idea adding a little corn or ham, ladies. And yes…add the CREAM and CHEESE at the end. If you put it in too soon, it’s no bueno! Happy Crockin’ y’all!

    The first 7 ingredients doesn’t include the cream!.. they listed salt and pepper in the same line but they are two different ingredients. Don’t put the cream in until after.

    The directions say first 7 ingredients, which includes the cream (1/2 & 1/2). But the video (and later in the directions) say to add the cream after the potatoes are cooked. Sooo…hypothetically speaking…what if one were to add the cream while cooking instead of after? I did cook my potatoes a bit before putting them in the crock b/c I wanted it ready a little sooner. So, maybe I’ll be ok? :-) Or..maybe I’ve just made a big mess? Anyway, if you could clarify and then correct the error I would appreciate it! Thanks!
