Lentils and Sausage

Ingredients

  • 16 oz Package Dry lentils
  • 16 oz Can Diced tomatoes, drained
  • 2 (14 oz) Cans Beef broth
  • 3 Cups Water
  • 2 Medium size carrots, chopped
  • 2 Pounds Kielbasa (Polish) sausage, cut into 1/2 inch pieces
  • 2 Stalks celery, chopped

Directions

  1. Step One

    Rinse and drain lentils, but do not soak.

  2. Step Two

    In a slow cooker, stir together the lentils, tomatoes, broth, water, carrots, sausage, and celery.

  3. Step Three

    Cover, and cook on High for 3 hours, or Low for 6 to 7 hours.

  4. Step Four

    Stir well before serving. I served with some yummy hot bread.

    I used smoked sausage in this and the lentils pull the flavor from it too. Also, I double the diced tomatoes because my family loves tomatoes. I used the Hunts with Garlic last time and it was delicious.
