Lentil and Sausage Stew – A delicious recipe for the slow cooker

Ingredients

  • 1 Pound Dry lentils
  • 1 Pound Smoked sausage, diced
  • 1 Can Sliced white potatoes, drained
  • 1 Can Sliced carrots, drained
  • 1 Can Tomatoes and zucchini, undrained
  • 1 (10 oz) Can Tomato sauce
  • 1/2 Bag frozen chopped onion
  • 1 Tablespoon Minced garlic
  • 4 Cups Chicken broth
  • 1 Bay leaf
  • 2 Teaspoons Kosher salt
  • 2 Teaspoons Black pepper

Directions

  1. Step One

    Pour everything into your crock pot and set on Low.

  2. Step Two

    Cook for 6 - 8 hours. If the soup looks a little too thick then add some more chicken broth or water.

  3. Step Three

    Remove the bay leaf before eating. This freezes and heats beautifully!

    This has great flavor! As the previous person said, I did fresh veggies as well. I did half the salt and next time will do half the pepper. Too peppery for us. Also you will DEFINTELY need more water/broth. Sorry I didn’t measure but I had to add water twice. Oh, and this makes a lot but I was excited to have some for the freezer! Will be making this soup again!

    I’ve made this twice now, but instead of using the canned/frozen veggies, I’ve used fresh (well, I used canned tomatoes). It’s so good and definitely a family favorite!
