A vegetarian version of the Loaded Baked Potato Soup. Great if you have a budding vegetarian or someone with dairy allergies in your family.
BIG thanks to Larry North for coming on and sharing this incredibly easy and incredibly healthy meal! The best thing about this meal is everything is optional, make it vegetarian or substitute any veggies for your favorites, eating healthy has never been easier!
- 3 skinless boneless chicken breasts, cubed
- 2 sweet potatoes, peeled and cubed
- 1 beet, peeled and cubed
- 1 cup cauliflower florets
- 1 cup onion, chopped
- 1 cup frozen peas
- 1 cup garbanzo beans, drained
- 1 cup black beans, drained
- 1 bunch fresh spinach
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- ½ teaspoon curry powder
- 2 tablespoons coconut oil (optional)
Place all ingredients into the slow cooker
cook on LOW for 4-6 hours
