This experiment was an accident that turned out fabulous!!!!
- 4-5 boneless skinless chicken breasts
- 1 Can corn, drained
- 1 Can black beans, drained
- 1 16oz Jar salsa of your choice
- 1 8oz. Package light or fat free cream cheese
Add all ingredients to large crockpot (except cream cheese)
Cook on high 4-5 hours.
When there is 30 minutes left add the brick of cream cheese and finish cooking.
Remove chicken and shred. Add back into crockpot.
Serve over rice. We use either brown or wild rice.
May add a tiny bit of shredded cheddar cheese and freshly chopped cilantro on top before serving.
