Jenna’s Chicken Salad
Corn and Frito Salad for Summer from Aunt Sherry
Super easy to make and so delicious! All it takes is ramen noodles, shredded cabbage, almonds, white wine vinegar, and sugar.
Great for a lunch by the pool, a picnic in the woods, or a light summer meal. Don't forget to try as a dip too!
Easy Chicken Salad for summertime
- 1/2 Whole chicken
- 1/2 Cup chopped celery
- 1/2 Cup chopped onion
- 1/2 Cup grapes halved
- 1/2 Cup chopped pecans or walnuts
- 1/2 Cup pineapple tidbits
- 1/2 Cup chopped apple
Crock whole chicken. Debone, dice, and place into a medium to large bowl.
Combine onion, celery, grapes, nuts of choice, pineapple with the chicken.
Add mayonaise or miracle whip to desired consistency.
Serve over crackers or as a sandwich. We love to serve on bread with a side of party potatoes.
