Chicken Soft Tacos – great family meal, slow cooker recipe for chicken soft tacos

You’ll channel the islands with this jerk-infused dish, which is the optimum combination of spicy and sweet.

Used 6-quart slow cooker

Ingredients

  • 4 Frozen Chicken Breasts
  • 1 1/2 Cups Water
  • 1 Bottle of Caribbean Jerk Marinade
  • 1 small onion, sliced
  • 1 (8 oz) Can Pineapple chunks, drained or half fresh chopped pineapple

Directions

  1. Step One

    Place chicken breasts, water, marinade, and onion in the slow cooker.

  2. Step Two

    Cook on LOW 7–8 hours or on HIGH for 3–4 hours.

  3. Step Three

    Add pineapple chunks in the last hour or wait until the end for a fresher taste.

  4. Step Four

    Serve over rice or in a warm corn tortilla with lettuce and Pico de Gallo.

    This was a hit for four out of five family members. I used less water, and left out the pineapple. The sauce was thick and spicy. I served this on flour tortillas with shredded lettuce which helped with the heat of the sauce. I will definitely make this again, and I might try with a milder sauce.

    I am planning on making this tomorrow for my boyfriend. He loves spicy and sweet things and it sounds amazing and all the comments back it up. I was wondering which part is the spicy part? I may not serve it with Pico… will that take away the spice? Any suggestions would be great! Thank you & can’t wait to try this dish!

    I made this exactly like the recipe and it was absolutely wonderful!! Our son-in-law was visiting and he loved it…my husband doesn’t like meat/fruit combos so wasn’t wild about it. I loved it!!! I’ll make this again and again for company for sure…my husband can eat hamburger tacos. :)

    Very easy. Meat was tender and shredded apart when touch. Will be made again in our house! We didn’t make taco. we served it over steamed white rice. Delicious!!

    We love this marinade for the BBQ, so was excited to try the recipe. Next time I would not use the water as there was about 1-1/2 to 2 cups too much liquid. We removed 1-1/2 cups of it and it was still had too much liquid. Shredded the chicken, used crushed/diced pineapple, and topped with lettuce and salsa. Will definitely try again but will do the following different: no water and will use flour instead of corn tortillas. My kids (8 and 5) really liked the different “tacos” so its kid approved (they didn’t even notice the pineapple or onion in the meat mixture). Enjoy!

    this is so easy – I sent the ingredients with my college age son to prepare as a New Years Day recovery feast. I forgot to tell them to add water, but they said it was delicious and the meat was so tender.

    This has become a favorite with my husband and myself! I’ve found that the kind of marinade you use does matter. I won’t mention namebrands but we have a favorite and I also didn’t really like the pineapples in this, so I just omit those. We serve this with rice and either okra or broccoli. My husband asks for this about every 2 weeks! Thanks for the recipe!

    I thought this recipe was great. I couldn’t find Caribbean Jerk marinade at my store so I purchased Island Mango. The marinade was fairly sweet on it’s on so I didn’t add the pineapple. I did add a red hot cherry pepper and a jalapeño to help balance out some sweet to spicy. I also only added about 1/3 cup of water. I would make this again with a different marinade or find another one to try. If I used the Island Mango again, I would add additional jalapeños.

    Great recipe. My husband loves it. We made the recipe to go over white rice. I did not think it was as spicy as noted.
    My only question: Do we need to add the water? I feel as though it waters down the sauce.

    Made this for dinner tonight and it was a big hit..If you haven’t tried it yet do so. I did add 1/2 cup brown sugar to make it not so spicy (I like spicy but my family does not). Served with tortillas, pico and black beans. When we ran out of tortillas my son used tortilla chips and made a nacho mixture and he really liked that. :) So happy to have found your website!

    You should be fine with a different marinade…It just will not have that “island” feel without the pineapple and caribbean sauce. You can try adding drained and rinsed can of beans or diced tomatoes. It should be really tasty.

    I thought this was VERY spicey. My husband liked it. Has anyone used another marinade flavor? Can I follow the same recipe (without the piceapple) with a different flavor? I was going to try Garlic & Herb tomorrow. Any suggestions?

    I loved the taste of this chicken recipe. Even better, I love that it was easy with a small ingredients list. The only reason I gave it a 4 instead of a 5 was the sauce was too brothy. I would have preferred it to be a little thicker. Next time I will use less water (actually I used broth instead of water.)

    Had some leftovers so tomorrow they will be served on warm tortillas. Yummy.

    If you are looking for an easy recipe with ingredients you may already have on had, I highly recommend this one.

    Im sorry…but, I made this tonight! My husband and I personally..didnt like this at all…I think maybe I added to much of the carribean jerk marinade..the one that I found was 12 fl ounce bottles..when I poured it in and mixed it up..it didnt look like enough..so, I added the second bottle. Which I didnt taste to bad with soft tortillas, sour cream and cheese ( hubby didnt like pine apple..I did). I wont be making these again..but..cant wait to try more recipes!
