You will be dreaming of sandy beaches and fruity umbrella drinks when you present this delicious pork tenderloin as your main dish.

Ingredients

  • 1/2 Teaspoon smoked paprika
  • 1/2 Teaspoon cumin
  • 1/2 Teaspoon chili powder
  • 1/2 Teaspoon cinnamon
  • 2-3 Pounds pork tenderloin
  • 1 onion, medium
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 garlic cloves, minced
  • 1/4 Cup brown sugar
  • 1 Tablespoon Tabasco
  • 2 Tablespoons olive oil
  • salt & pepper to taste

Directions

  1. Step One

    Mix the ingredients for the dry rub in a small bowl. Smoked Paprika, Cumin, Chili Powder, Cinnamon, Salt & Pepper

  2. Step Two

    Sprinkle the dry rub on all sides of the tenderloin and set aside.

  3. Step Three

    Coarsely chop the onion and bell peppers.

  4. Step Four

    Mix brown sugar, garlic and Tabasco in a bowl.

  5. Step Five

    Spray slow cooker liner with nonstick spray

  6. Step Six

    Place onions and peppers in bottom of slow cooker

  7. Step Seven

    Place the tenderloin over the onions and peppers

  8. Step Eight

    Coat with brown sugar mixture and then drizzle with 2 tablespoons of olive oil

  9. Step Nine

    Cover and cook on low 6 hours

    We’ve had this SEVERAL times–it is off the scale awesome!!!!! We usually end up shredding the pork and serving over basmati rice.

    Is this real spicy? I love spicy but some of my family. I’d love to make this but need to make sure it’s not overly spicy first.

    Question: Has anyone tried this recipe with a family sized pork loin? The loin cut fits my budget better than the tenderloin. Maybe I could cook it with double the spices?

    I made an extra batch of the spices, quartered 6 potatoes, placed the potatoes on top of the tenderloins, sprinkled the spices over top, drizzled everything with honey, then cooked as directed. OMG! these were the best pork tenderloins and best potatoes we’ve enjoyed in quite a while! Thank you, Crockingirls!
