Hearty and Healthy Chicken Soup – An easy and delicious recipe for the slow cooker


  • 4 boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 stems of celery, chopped
  • 1 small bag of baby carrots
  • 5-6 small potatoes, cubed
  • 1 Can pinto beans, drained
  • 1 Can kernel corn, drained
  • 1 Can Rotel
  • 3 Cans chicken broth (low sodium)


  1. Step One

    Combine all ingredients in slow cooker.

  2. Step Two

    Cover and cook on low for 8-10 hours.

    This recipe is good and nutritious however it has no flavoring whatsoever in it. It would be nice if you could tell us what spices we can use.

    Jennifer, noodles in the crock can be tricky. I would pre-cook them and then just add them 10-15 minutes before serving…just enough time for them to reheat. You don’t want mushy noodles!!

    Yes, Kristen, and whichever you prefer. I like my chicken to be shredded because I think it adds more flavor to the soup…a little chicken in every bite!

    Hey, y’all! I’m just gonna jump in here and answer. I would suggest cooking the noodles then adding them, Jennifer.

    Jillaine, rotel is a can of diced tomatoes with green chilies. The brand name is “Rotel.” We put a can (or two) in almost anything, down here in Texas!!!! I mess with one of my girlfriends because I literally counted 12 cans (!!!!!!!) in her pantry one time!

    Tiffany, at what point did you add your egg noodles…….or did you cook them separately and add them to your bowl?

    I’ve added 4oz of egg noodles to make it a hearty chicken noodle soup! In fact, I use the low card noodles…5g rather than 40g!
