Slow Cooked Buffalo Chicken Sandwiches – A delicious recipe for the slow cooker
6 quart or larger slow cooker
Serves 8 to 10
Healthy eating isn't always easy, but crockin' your meal makes it a whole lot easier! This healthy dish might not be a prize winner in the beauty department, but when it comes to healthy, fresh and delicious- this healthy "mess" will be a winner for sure!
- 4 boneless, skinless chicken breasts
- 1 sweet onion, chunked
- 2 cups chopped carrots
- ½ cabbage, chopped
- 1 yellow squash, chunked
- 1 zucchini, chunked
- 2 dry Italian dressing seasoning packets
- 3 to 4 tablespoons olive oil
- Minced garlic, to taste
- 1 spaghetti squash, cut in half and pulp and seeds removed
Place chicken in slow cooker.
Top chicken with chopped veggies.
Add minced garlic, Italian seasoning, and drizzle with olive oil. Stir to coat veggies.
Place spaghetti squash on top of veggies with meat side down.
Cover and cook on LOW for 5 hours.
Carefully remove hot spaghetti squash. You should be able to shred chicken in slow cooker and mix with veggies. Using a fork, scrape spaghetti squash creating spaghetti-like noodles and stir into chicken and veggie mixture.
