I have a question – it doesn’t say what kind of cheese to use. I got shredded extra sharp cheddar cheese. Is that ok?

This is one our family’s favorite recipes- we make it at least once a month! Also IF there are any leftovers, they can be used to make Cheddar Chowder Soup- just make a basic white sace using butter, flour and milk, then add cheddar cheese and when melted, add leftover ham scalloped potatoes, yum!
