This taste just like a stuffed green pepper. Wonderful for cold winter nights. A comfort food for our family. We serve it with Corn Bread.

Ingredients

  • 1 Pound Ground Beef Cooked and Drained
  • 1 Package Dry Onion Soup
  • 28 Ounces Diced Tomatoes with Garlic
  • 15 Ounces Tomato Sauce
  • 3 Large Green Bell Peppers Chopped
  • 1 1/2 Cups Chopped Onion
  • 3 Cloves Minced Garlic
  • 2 Beef Bouillon Cubes
  • 1/4 Cup Light Brown Sugar
  • 3 Tablespoons Apple Cider Vinagar
  • 2 Teaspoon Pepper
  • 4 Cups Water
  • 1 1/2 Cups White Rice Cooked

Directions

  1. Step One

    In skillet brown the ground beef, drain rinse then place in crock.

  2. Step Two

    Combine the diced tomatoes, tomato sauce,and dry onion soup add with ground beef.

  3. Step Three

    Add the peppers, onion, garlic, bouillon, brown sugar, water, and black pepper.

  4. Step Four

    Cook on LOW for 8 hours. Add the cooked white rice and cook for an additional hour.

  5. Step Five

    Serve with Bread or crackers of you choice.

    This soup turned out fantastic! Easy prep too. I tweaked this recipe for my families taste. I used ground lean turkey, Hunts fire roasted diced tomatoes, Knorr low sodium homestyle concentrated stock and tomato soup instead of sauce. It was fantastic great alternative to stuffed peppers my kids never eat the pepper only the filling but they gobbled this up and asked for more! adding this one to my recipe box. :)

    This soup turned out wonderfully! I added a bunch more green peppers because I love them, but overall a great recipe! I forgot to buy tomato sauce so I subsituted a can of progresso tomato basil soup and it turned out just fine. I also left out one of the bouillon cubes.
