Grammy’s Cucumber Salad
This was always a favorite of mine growing up. My Aunt always made it when she knew we would be visiting.
Two of our favorite things: Mexican food and pasta, all in one fabulous recipe! Your family is sure to be asking for this dish many times over. Enjoy!
Tater Tot Soup – Made in slow cooker
Delicious and light cucumber salad from Grammy for the summer time!
- 1 large red onion, cut into rings
- 1 large cucumber sliced
- 1/3 Cup rice vinegar
- 1/3 Cup red wine vinegar
- salt and pepper to taste
- 1/3 to 1/2 Cup sour cream
Place all ingredients EXCEPT SOUR CREAM in a bowl with a lid and shake.
Refrigerate for at least an hour (tossing contents a few times so that vinegar gets on all vegetables).
When you are ready to eat it drain the vinegar and add in the sour cream, tossing with lid on to coat salad.
