Ingredients

  • 3 lbs. small red potatoes, diced
  • 5 garlic cloves, minced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 2/3 cup water
  • 1 cup cream cheese with onions and chives
  • 2 tablespoons butter
  • ½ cup milk or heavy whipping cream
  • Salt and pepper to taste

Directions

  1. Step One

    Place potatoes in the slow cooker.

  2. Step Two

    Add garlic, onion, salt and pepper to taste, and water. Mix to coat.

  3. Step Three

    Cover and cook on high for 3-4 hours, or until potatoes are tender.

  4. Step Four

    Remove lid and mash potatoes to desired consistency.

  5. Step Five

    Stir in cream cheese, butter, and add the milk or cream to your liking.

  6. Step Six

    Serve right away, or switch your slow cooker to warm.

    The red potatos give it a different earthy taste than i’m used to. I would use regular white potatos instead.
