Low Fat Mexican Fiesta Chicken

This low fat Mexican fiesta chicken is a great alternative to fast food! Not only is this Mexican fiesta chicken healthy, it is quick and easy to make!

So good. Really easy and yummy:) You can also use chicken thighs instead of chicken breasts. I use black beans but use whatever beans your family likes. I serve it over rice with a little light sour cream.

Ingredients

  • 3 Whole Boneless Skinless Chicken
  • 1 Can Cream of chicken
  • 1 Jar Smooth salsa (small jar)
  • 1 Can Corn
  • 1 Package Taco Seasoning
  • 1 Can Black Beans

Directions

  1. Step One

    Place chicken in slow cooker.

  2. Step Two

    Mix remaining give ingredients together and pour over chicken.

  3. Step Three

    Cook on low for six hours.

  4. Step Four

    Serve over rice, garnish with sour cream.

    This was so delish! I added a small can of diced mild green chiles, fresh cilantro, and some lime juice. Served it over brown rice. Will be making this again!

    This was my 1st crockin’ recipe and it turned out great! I would add drain the juice from the corn and bllack beans because it was very soupy. I sliced up the super tender chicken and put it in taco shells with shredded cheese. Kids loved it too, which is definitely a big deal at our house. This will go in our rotation of meals for sure.

    My family loved it. I was concerned at first that the kids would not eat it since it had hot sauce. I made it with mexican rice so the kids mixed it together and finished their plates. I will make again.

    I make a something like this but mine you mix in 2 cups of shredded cheese and pour it over the chicken. We then slice the chicken and serve it in tortillas. Always a crowd pleaser.

    This turned out Fantastic. I added cilantro , fresh lime juice and scallions at the end for serving over rice. My whole family loved it.
