This low fat Mexican fiesta chicken is a great alternative to fast food! Not only is this Mexican fiesta chicken healthy, it is quick and easy to make!
So good. Really easy and yummy:) You can also use chicken thighs instead of chicken breasts. I use black beans but use whatever beans your family likes. I serve it over rice with a little light sour cream.
- 3 Whole Boneless Skinless Chicken
- 1 Can Cream of chicken
- 1 Jar Smooth salsa (small jar)
- 1 Can Corn
- 1 Package Taco Seasoning
- 1 Can Black Beans
Place chicken in slow cooker.
Mix remaining give ingredients together and pour over chicken.
Cook on low for six hours.
Serve over rice, garnish with sour cream.
