Easy slow cooker Enchiladas - A tasty recipe for the slow cooker.

Ingredients

  • 1.5 Pounds Lean ground beef
  • 1 Can Cream of chicken soup
  • 1 Can Cream of mushroom
  • 1 Large white onion chopped
  • 16 Ounces Picante salsa ( or whatever kind you like I use one from the taqueria) at least
  • 2 Cups Shredded mexican blend cheese
  • 1 Dozen tortillas corn or flour tortillas

Directions

  1. Step One

    Brown ground meat with chopped onion add salt, pepper, garlic to your liking brown and drain.

  2. Step Two

    Mix both soups and salsa in a bowl.

  3. Step Three

    In slow cooker, 1st layer 1/3 of meat, then 1/3 of soup mixture, sprinkle cheese to cover then a layer of tortillas (I tear mine into quarters).

  4. Step Four

    Now repeat layers - usually makes 3 layers, then I top mine with cheese put in slow cooker.

  5. Step Five

    Cook on high for an 1 hr - 1 1/2 hrs or on low for longer.

  6. Step Six

    Serve with sour cream, guacamole, and chips!

    I have made this 3 times now. First time I used mild salsa, my children thought it was to spicy…. the second time I used extra mild and they liked it better, however I realized its more saucy than meaty. So last night I made it with 3 lbs of ground beef and took it to my husbands work for Halloween gathering. It was a huge success Thank you

    Sorry girl! Hate it when a recipe doesn’t turn out :( If you have a favorite enchilada recipe, you can just adapt that and make it in the crock. There are several others on here, too that don’t include cream soups.

    Didn’t like so much. I never heard of adding cream of mushroom or cream of chicken to enchiladas. I tried it anyways. Sorry girls, just didn’t like it! My husband had a couple bites and we had to toss it and he will eat anything. Some might like this recipe but it didn’t set well with us. Thanks anyways.

    My husband loved this. We’ll be putting it into regular rotation. I did use ground turkey instead of ground beef, since we aren’t big red meat fans–it was still delicious.

    This recipe was really yummy. I didn’t have any shredded cheese, so I layered cheddar cheese in the mix, and I added chopped garlic when I browned the meat. I only ended up tearing up 2 tortillas and it was plenty. My husband loved it and actually went for leftovers the next day (unheard of). I would definitely recommend this. I have a Nesco 6Qt Roaster Oven, and I set it to “Slow Cook” for about an hour.
