Diet Coke Pot Roast - A tasty recipe for the slow cooker.

Ingredients

  • 1 Rump roast ( or any kind you like)
  • 1 Can Diet Coke ( you can also use regular)
  • Salt, pepper, garlic, to taste
  • 2 Large potatoes, cut into 1 inch chunks
  • 1 Package Baby carrots
  • 1 Medium onion, sliced

Directions

  1. Step One

    Season roast to taste, I use salt, pepper and garlic.

  2. Step Two

    Peel and slice potatoes.

  3. Step Three

    Put potatoes, carrots and onion in bottom of slow cooker.

  4. Step Four

    Season vegetables with salt and pepper.

  5. Step Five

    Place roast on top of vegetables and then pour in one 12 ounce can of diet coke (or regular).

  6. Step Six

    Cook on high 3 to 4 hours or on low 6 to 8 hours.

    Linda, Sorry your roast didn’t come out like you hoped. Next time make sure you season well. Sometimes more than you usually do. When slow cooking, the seasonings tend to cook out a bit.

    Love this. Have fixed it several times. When doing it on a work day, I put everything in crockpot and put it in fridge. In morning I put in on and start the cooking. Daughter usually stops by in afternoon and turns it to warm. All ready to eat when I get home from work.

    Don’t know what happened and I followed the recipe as given. The roast had no taste when it was done. The potatoes and veggies were good.

I fixed this tonight for dinner and when my daughter came home from school she wanted to know what smelled so good and I told her Diet Coke Roast and she couldnt believe I used diet coke to cook the roast. I followed the recipe and only added just a little garlic. I got thumbs up for this and they have already asked me to cook this again. Thanks again Crockin Girls ya’ll are the BEST!!!

    It is a good idea to brown your roast. It seals in the juices and makes it realy yummy.

    Kathy, the Diet Coke takes the place of water or any other liquid. The soda helps break down the meat and makes it super tender as well as very moist. :)
