Cucumber Onion and Vinegar Salad

This is my go to meal for a large crowd--it is always a great hit with tail gaters, family reunions, and church groups.
We love this with any summer meal.
- 3-4 Cucumbers, sliced and peeled
- 1 small onion, sliced into rings
- 1/2 - 1 Cup vinegar
- 2 Cups water
- salt and pepper to taste
Place the cucumbers and onion in a bowl.
Add the vinegar, water, and salt and pepper to taste.
Place in the fridge and serve cold. If you would like it less sour, feel free to add more water. We love this with any summer meal.
