Shredded Pork Loin Roast

Cook once and serve multiple ways? Yes, please! We like to get a LARGE roast and turn our leftovers into MAKEOVERS by serving the same main dish a variety of ways! You may not be able to pull the wool over your families eyes serving the same thing again and again, but put this tasty shredded pork on nachos, baked potatoes, tacos, and sandwiches and they won’t think twice about gobbling it up!

Ingredients:

1 (5 lb.) pork loin roast
1 18 oz bottle of Sweet Baby Rays BBQ sauce
1 can Dr. Pepper
Onion powder, to taste
Garlic powder, to taste

Directions:

Place roast into the slow cooker and season with onion and garlic powder. Cover with BBQ sauce and then pour Dr. Pepper over the roast. Cook on LOW for 6-8 hours until pork is tender. Shred with forks.

 

 

This is a recipe that you can use for sevreral different recipes, such as: 1. BBQ pork roast sandwiches served with lettuce, tomato, chips, and a pickle
2. BBQ pork roast loaded baked potato served with sour cream, butter, and chives
3. BBQ pork roast nachos served with chips, refried beans, lettuce, tomatoes, onion, black olives, and shredded cheese
4. BBQ pork roast Corn tortilla tacos served with broccoli slaw and avocados

    I think a 5lb would serve 10-12 people...depending on the appetites of your guests!

    How much does a 5 lb pork loin serve? I'd like to make enough to serve about 25 people. Probably just using rolls vs full sized hamburger buns though.

    I made this a while back and I think I may have just gotten a bad cut of meat, or maybe overcooked it. The flavor was great, but it was tough and I had a hard time shredding the meat. I want to try it again, so we'll see!

    I am attempting this for a party with my girl friends this evening. I just now put it in the slow cooker. Any chance it will be done by 6:30?

    Hi Crystal, I would say about 2-3 hours on low and see if it's tender enough to shred. Don't lift the lid too much, but since yours is already smoked maybe you can check it every hour. Don't want it to overcook like you said :) Happy Crockin' to ya!

    My husband smoked a pork loin and I would like to throw it in the crockpot (already cooked) using this recipe. How long should I leave it in the crock pot so that it will shred, but not overcook?
