Chicken and Dumplings


What is that wet stuff falling from the sky?!?! We are so thankful for the rain that Texas has received over the last few days… and it also made for good Chicken and Dumpling weather! This is such a great recipe for the cool months, and it is also nice that it is a hearty enough soup to “stand alone”. We chose to serve our C&D with some steamed broccoli, and it added a punch of color and flavor to the meal! We also chose to change things up a bit and add in some veggies to the mix, and it turned out very yummy! This meal makes us want to stay indoors and relax with our families… board game anyone???

Feel free to substitute any ingredients you wish, and increase/decrease amounts for the size of your family!
Ingredients:

4 boneless/skinless chicken breasts
2 tablespoons of butter
1 (10.75 oz) can of cream of chicken soup
1 (10.75 oz) can of cream of celery soup
3 1/2 cups of chicken broth
1 onion, finely diced
1 cup celery, diced
1 cup carrots, diced
Chicken bouillon seasoning or cube
Salt and pepper
Directions:

EXCLUDING THE BISCUITS put all ingredients in, then cover and cook on LOW for 8 hours. About an hour (give or take) before serving, remove chicken and pull into pieces and return to the soup mixture, place the torn biscuit dough in and cook until the dough is no longer raw in the center.

    Another thing you can do is coat your raw biscuits in flour before you put them in your crock. The pot pie is a yummy idea!

    With my husbands help - we made this the other day. It's good but it is very thin Add some flour if you want a thicker sauce. The leftovers are going to be turned into a pot pie, they are perfect for that!

    Debbie, you will need a 10 oz can of biscuits, push them down into the liquid, let it cook for about an hour - hour 1/2.

    how many cans of biscuits do you use? and approximatly do you cook after you add the biscuits..

    I use Bisquik for my dumplings, but I beat an egg in a 2/3 cup measuring cup then add the milk folling the recipe on the box. My drop dumplings come out very light and fluffy.

    Love this - made it for my husband tonight and he adored it. I made a few modifications, though.
    - used rotisserie chicken (all of the breast meat and some of the thigh meat)
    - cream of mushroom to replace cream of celery soup
    - 5 - 6 cups broth
    - 1 cup frozen peas (right at the end)
    - 3 cups egg noodles
    annnd... I did it all on the stovetop!
    So, I sauteed veggies in butter (2T), added broth, cooked noodles in boiling broth for about half of the cooking time, added soup and chicken, then dropped the biscuits on top (small pieces). Turned the heat down to low. I left it uncovered for 10 minutes, and then covered for 10 minutes -- it was perfect!

    I made this today and it was delicious! My husband even told me how great this recipe is. One of the things that I modified to save time was I used a rotisserie chicken, that I bought at a local store, instead of chicken breasts. It was a little soupy but I think I added too much liquid. I got started late so I also cooked the vegetables on the stove in the chicken broth. Then I added the veggies and broth to the crockpot, added the soups, chicken, salt and pepper and did some house work. I added the biscuits later and it turned out wonderful! It is definitely a recipe I will keep using especially in the winter.

    I make my dumplings from scratch. I have never cared for biscuits or tortillas as dumplings. I have a family recipe for dumplings and with that recipe and this soup-DELICIOUS! I also add no yolk egg noodles to my soup, too. Chicken Noodle with Dumplings :) My family loves it! I omit the celery though since nobody likes celery (I use the cream of celery though!).
