Breakfast Casserole and Corn Chowder

A Crockin’ Christmas with our tiny crockers assisting us... can’t get better than that! We love both of these recipes for Christmas because we don’t like to miss a minute of the festivities (also translates to crazy family moments) stuck in the kitchen! Waking up to Santa’s surprises AND a yummy casserole in the crock makes Christmas morning enjoyable! After things settle down a bit you can get the corn chowder in the crock for a relaxed take on lunch or dinner!

Breakfast Casserole
Ingredients:

1 package diced frozen hash browns
1 lb breakfast sausage
8 oz diced ham fresh baby spinach (a couple "handfuls")
1/2 cup fresh chopped mushrooms
1 cup chopped onions
1 can rotel
18 eggs
1 cup cheese
salt and pepper
Directions:

Lightly brown breakfast sausage (it should still be partially raw… just brown enough to be able to crumble the meat). Layer half of the hash browns in the bottom of slow cooker, followed by 1/2 of sausage and 1/2 of ham. The next layer will be all of the baby spinach, the mushrooms, and onions. Repeat the first 3 layers (hash browns/sausage/ham), and then top with a can of rotel. Whisk the 18 eggs in a bowl, then pour over top. Sprinkle cheese over top of casserole and cook on low for about 8 hours!

Corn Chowder
Ingredients:

4 potatoes (peeled and diced)
1 can cream corn
1 can whole kernel corn
2 cups chicken broth
8 oz diced ham
1 cup diced onions salt and pepper
1/4 cup butter
2 cups half and half
Directions:

Place potatoes, both cans of corn, chicken broth, ham, and onions into the slow cooker. Cook on low for 7-8 hours. Mash the mixture to your desired consistency and then add the butter and half and half. Cook for an additional 30 minutes on high, and you are set!

    Hey Ashley...it might be because their crocks cook hot. A lot of the new ones do. All crocks cook a little differently just like ovens. I can let things cook on low in my GE crock for 6-8 hours and my food doesn't burn. But if I let my food go that long in my Hamilton beach, it dries out big time and starts burning. You just have to adjust the cooking time to the way your crock cooks :) Here's a link to some of our favorite slow cookers if that helps... http://crockingirls.com/crockin-101.html

    I'm very interested in trying out this recipe... although I do have a few concerns. There is a reciepe very similar to this one that I found on another website but everyone was complaining about it being burnt and dry...Has anyone had any problems with that? And if you have, suggestions?

    Michelle, glad the casserole came out good...hey and if your 4-year old didn't like it...no problem, more for you. :)

    Christian, your husband must have really liked it to finish it off at breakfast. Glad it was a hit. :)

    In the end, the recipe came out great! I added a bit of Tobasco sauce to my plate, and a little extra cheese on top. DEEEELISH. My 4-yr old didn't like it, but I had plenty of pulled-pork leftovers from the weekend that he ate!

    Michelle, it will be fine if it is out of order. That's one of the reasons crockin' is so great!! It is sooo forgiving. If you can't get there at lunch, just add your favorite salsa when you serve it...that would be good as well.

    OH NO!!! I put the Breakfast Casserole together this morning before work. I'm now at work and realized I didn't put the Rotel in!!! Dang it! AND I didn't grease up the crockpot :( I might be able to run home at lunch and throw the Rotel in, even though it won't be in the correct layering order. Hope it still turns out ok :(
