This creamy corn dish will leave you lickin' your lips it's so sweet and yummy! It's perfect for Thanksgiving side or any time of year.
Ingredients
- 1/2 Cup butter
- 1 Cup sour cream
- 1 egg
- 1 (16-ounce) Can whole kernel corn, drained
- 1 (16-ounce) Can cream style corn
- 1 small box cornmeal mix
Directions

Step One
In a small bowl, mix butter, sour cream, and egg together.

Step Two
Stir in both cans of corn and muffin mix.

Step Three
Spray slow cooker with nonstick cooking spray and pour batter in the crock.

Step Four
Cover and cook on HIGH for 2 to 3 hours or until toothpick inserted comes out clean.

Hi everyone! I have made this recipe now twice and it is fantastic! It turns out really well if you use cooking spray. I have always made the oven version but this was just as good and so easy. I used a 5QT slow cooker (on high as directed) and it takes exactly 3 hrs. My smaller crock runs hot so I rotate the crock in the heating element halfway thru cooking. Truly a set and forget recipe w delicious results!

A good rule of thumb is to double the time when cooking on low. Not sure how this will work with this particular casserole. Good luck.

Very tasty. I assume the butter needs to be melted. Also a small bowl isn’t big enough to mix this in…you need a large bowl. I think i’ll make this again for Christmas (should go nice with a ham).

Is it an option to cook this on low for a longer time than 3 hours? I’m going to be out today for longer than three hours and want to cook while i’m out, but I don’t want to put it on high and risk burning it before i get home. So, I’m thinking low, but for how long?

Can you tell me how many oz are in the ‘small box of cornmeal’? Is that just the small 8.5 oz box? I bought the smallest size they had but it is 32 oz and I am guessing that is way too much.

We used out 6qt GE slow cooker for the corn casserole. Meghan, if you’re making this for Thanksgiving you can double it. That should be enough for 12-16 servings if made in a 6-7qt slow cooker.

I doubled this recipe in my 2 qt crockpot and it took about 4 hours on high.

Lucky students. You will not want to increase the time. Just do a toothpick test to make sure it is all done.

For the broccoli dish, I would like to use fresh broccoli and real, long cooking rice. I would imagine that in order to do this, a certain amount of liquid would have to be added as the frozen broccoli gives off liquid and the regular rice would need more water/liquid in order to cook.
Have you tried this with fresh ingredients?
The corn casserole sounds good and I’ll try that for sure. I make my cornbread from scratch, so I will have to adjust, I suppose.

What size slow cooker for this recipe…it would really be great if the size of the slow cooker were included in all of the recipes; maybe in the section for prep time, cook time & temp.

This is one of my families favorite Thanksgiving and Christmas dishes!! I usually make it in the oven and was wondering how it would turn out in my slow cooker!
My cooker tends to run hot…….I’m not sure I’ll need to leave it on for the full three hours; I am so happy though to have this receipe “converted” to a slow cooker version.
