Chicken Pot Pie – A delicious recipe for chicken pot pie made in the slow cooker
After you crock this simple whole chicken recipe, use it to make Nicole's or Jenna's Chicken Salads. These salads are great for a lunch by the pool, a picnic in the woods, or a light summer meal. Don't forget to try as a dip too!
Used 6-quart slow cooker
Nicole's Chicken Salad
1/2 to whole chicken chopped in chunks
3-4 sweet pickles
3-4 sour pickles
6 hard boiled eggs, finely chopped
1 1/2 - 2 cups red grapes, sliced in half
1 green apple, chunked
1 red apple, chunked
1 cup pecans
1 cup miracle whip or mayonnaise (which ever you prefer)
your choice of bread or chips
Crock whole chicken. Debone, dice, and place into a medium to large bowl. Mix all ingredients together. Serve immediately with bread or chips or refrigerate until ready to serve. Makes approximately 8 sandwiches.
Jenna's Chicken Salad
1/2 whole chicken
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup grapes halved
1/2 cup chopped pecans
1/2 cup pineapple tidbits
1/2 cup apple
salt & pepper
mayo or miracle whip (to your desired consistency)
Crock whole chicken. Debone, dice, and place into a medium to large bowl. Combine onion, celery, grapes, nuts of choice, pineapple with the chicken. Add mayonaise or miracle whip to desired consistency. Serve over crackers or as a sandwich. We love to serve on bread with a side of party potatoes.
- 3-4 pound whole chicken
- 1-2 Tablespoons onion powder
- 1-2 Tablespoons garlic salt
- 2 Tablespoons chicken bouillon granules or cubes
Place chicken into slow cooker.
Sprinkle seasonings onto chicken and rub to coat. Flip chicken and repeat.
Cook on LOW for 7-8 hours or HIGH 4-5 hours or until the chicken is falling off the bone.
