After you crock this simple whole chicken recipe, use it to make Nicole's or Jenna's Chicken Salads. These salads are great for a lunch by the pool, a picnic in the woods, or a light summer meal. Don't forget to try as a dip too!

Used 6-quart slow cooker

Nicole's Chicken Salad
Ingredients:

1/2 to whole chicken chopped in chunks
3-4 sweet pickles
3-4 sour pickles
6 hard boiled eggs, finely chopped
1 1/2 - 2 cups red grapes, sliced in half
1 green apple, chunked
1 red apple, chunked
1 cup pecans
1 cup miracle whip or mayonnaise (which ever you prefer)
your choice of bread or chips

Directions:
Crock whole chicken. Debone, dice, and place into a medium to large bowl. Mix all ingredients together. Serve immediately with bread or chips or refrigerate until ready to serve. Makes approximately 8 sandwiches.

Jenna's Chicken Salad
1/2 whole chicken
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup grapes halved
1/2 cup chopped pecans
1/2 cup pineapple tidbits
1/2 cup apple
salt & pepper
mayo or miracle whip (to your desired consistency)

Directions:
Crock whole chicken. Debone, dice, and place into a medium to large bowl. Combine onion, celery, grapes, nuts of choice, pineapple with the chicken. Add mayonaise or miracle whip to desired consistency. Serve over crackers or as a sandwich. We love to serve on bread with a side of party potatoes.

Ingredients

  • 3-4 pound whole chicken
  • 1-2 Tablespoons onion powder
  • 1-2 Tablespoons garlic salt
  • 2 Tablespoons chicken bouillon granules or cubes

Directions

  1. Step One

    Place chicken into slow cooker.

  2. Step Two

    Sprinkle seasonings onto chicken and rub to coat. Flip chicken and repeat.

  3. Step Three

    Cook on LOW for 7-8 hours or HIGH 4-5 hours or until the chicken is falling off the bone.

    Oh my goodness ya’ll!!! This was the easiest and THE BEST chicken ever!!! I bought my chicken~but neglected to look at the weight and it was almost 7 lbs! LOL Needless to say I doubled the cooking time and put it on high and it was super!!! It was a little dry but it was still great!! Thanks for making our lives easier!! Just ordered your cookbook~can’t wait to get it!!

    Just crocked my whole chicken..I have to say the easiest way to cook a whole chicken. I only had a couple bites of it because I am going to put it (and the juices) in the crock tomorrow to make Chicken Noodle Soup. I hope it turns out. Not sure on the time since the chicken is already cooked so I just have to watch it.

    Well, I through my chicken in the crock pot this morning and I rubbed it with garlic powder as written in your ingredients but I just watched your video and you said garlic salt. I hope that it will be ok, I will taste test a little later. Also, I did not have onion powder but I did have minced onion so I used that. I will let you know how it came out.

    This was amazing and so easy! The house smelled great and we had chicken all week for leftovers and chicken salad for lunches! I think you get more chicken cooking it this way, then, say, a store-bought rotisserie since all the meat literally FELL off the bone! Loved it!

    Hey Jackie…it’s the All-Clad Deluxe. She pricey, but worth it at 7 quarts with a non-stick insert that you can use on the stop top to brown your meat. SUPER cool!

    My chicken was a little bland but because I used just a normal amount of seasoning in fear it would be too much. I didn’t compensate for the hours it was cooking like y’all said in the video. Next time I will be more heavy handed with it. I made Jenna’s chicken salad and OMG!! Delicious!!!! Thanks again girls!
