Tip: Since this recipe does take some preparation, I cook the meat, chop the onion and the potatoes the night before. I put the potatoes in water so they don't get brown.

Ingredients

  • 3 Cans Minestrone soup
  • 1 Can Ranch style beans
  • 1 Can Rotel
  • 1 Can Whole kernel corn
  • 1 1/2 Pounds Ground beef (cooked and drained)
  • 3 Potatoes cubed
  • 1 Onion chopped

Directions

  1. Step One

    Cook in slow cooker on low for 10 hours.

    Is this 3 cans of condensed minestrone soup or 3 cans of ready to serve soup? What is Rotel?

    I love this stew! I had a similar recipe that I’ve used for a while, however, it didn’t have the corn or potatoes like this one. With those added ingredients, it makes it go a little further and makes it a real hearty stew! It’s great served with cornbread and honey!
